
Ingredients
12 medium size red tomatoes
2 – 16 ounce containers of ricotta cheese
4 fresh green onions
12 basil leaves or bay leaves for garnish
Preparation
Wash the tomatoes, cut 1 inch of the top off, clean out the inside and rinse out any seeds.
Using a small blade kitchen knife cut V shapes along the edges of the tomato.
Wash and pat dry the 4 fresh green onions, make a single cut down the center of the onions, make another cut down the center of each of the two pieces of green onions, you will now have 4 long thin strips for each of the four green onions, cut each strip down the center again, then cut each strip horizontally so you have tiny thin little pieces of the green onions.
In a large mixing bowl combine the ricotta cheese and green onion pieces, mix well.
Using a large serving spoon stuff your tomatoes with the ricotta cheese and green onion mixture.
Place a basil or bay leaf on top of each stuffed tomato.
